It's this week's Bible Study!
Even though Cat will be taking the class next week,
I've already begun my homework and enjoying it immensely.
I know that you are really going to enjoy your study in Revelation 2,
as well as diving into portions of Deuteronomy and Acts.

1 1/2 cups gluten-free rolled oats
1 cup unsweetened coconut flakes (not the usual shredded coconut used in baking)
1 tablespoon golden flaxmeal
1/2 teaspoon salt
3/4 cups coarsely chopped pecans ( I used walnuts / or you could try almonds)
1/2 cup dried blueberries (I used chopped dates / or you could try dried cranberries or raisins)
3 very ripe bananas, mashed ( I used 2 large bananas)
1/4 cup coconut oil, warm enough to be liquid
1 tablespoon agave nectar (I didn’t add this)
1 teaspoon vanilla extract
Preheat oven to 350* Combine oats, coconut, flaxmeal, salt, nuts and dried fruit. Stir in bananas, oil, agave nectar and vanilla until well combined.
Press 2 tablespoons of mixture into a 2 1/2-inch round cookie cutter (I used a small ice cream scoop and then flattened each cookie) onto a baking sheet coated with parchment paper. Continue with remaining mixture.
Bake at 350° for 25 minutes or until fragrant and golden – should be crispy. Cool on pan.
Yield: about 15 cookies (I got a few more than this)
